Fluffy Pancakes
Soft, light pancakes that work with berries, chocolate pieces, or syrup.
Ingredients
- 200 g wheat flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- Pinch of salt
- 2 eggs
- 300 ml milk (more if needed for thinner batter)
- Butter or oil for the pan
Steps
- Whisk flour, baking powder, sugar, and salt together in a bowl.
- In another bowl, whisk eggs and milk until smooth.
- Pour the wet mix into the dry ingredients and whisk gently until just combined. A few small lumps are fine.
- Let the batter rest for 5–10 minutes so it thickens slightly.
- Heat a non-stick pan on medium heat with a little butter or oil.
- Pour small rounds of batter into the pan and cook until bubbles appear and the surface looks set, then flip and cook until golden.
Serve warm with berries, chocolate spread, or maple syrup.
